Sixtine, YOU eat vegetables????
*followed by a face of disbelief


The fact that this is a very common reaction I get from my friends and family says a lot about my past eating habits: 


College friends will tell you that I could easily live on french fries (BELGIAN FRIES!) and salt crisps.


My boyfriend will tell you that white rice, baked beans, eggs, bacon and cheese all thrown together in one pan used to be my go-to meal to cook for him. Sometimes I would add a pea or two if I was feeling adventurous.


My grandmother will tell you that I used to switch plates with my vegetable loving cousin once she had finished all her veggies and I had finished all my meat. 


My primary school teachers will tell you that I missed A LOT of playtime during lunchbreak because I just. wouldn’t. drink. my. soup.


And lastly, my parents will tell you that feeding me fruits and vegetables has been a nightmare ever since I was two years old.

Ever since that day I suddenly decided: “BERK, can’t eat this” and kept my mouth firmly shut.

Hi,

My name is Sixtine Anseel, I live in a small appartment in the center of  Ghent, Belgium.

I am a 26 year old architect with a newly discovered passion for holisitic food and the impact it has on our body. That new passion started with me having a lot of digestive troubles and being diagnosed with IBS (Irritable Bowel Syndrome).

Oh, and it's only been four years since I've really started eating any vegetables or fruits.

Since then, I've learned to enjoy healthy food and as a reward I have been feeling better and better.

I made this blog to share my journey with you, in the hope that some of you find it usefull or entertaining.
